Does anyone know if using an 8 x 8 field of view size would result in a better light field alignment test than using a 12 x 12? Does the size of the field of view matter?
Not particularly. I always used a 4X4 field size with Pretty good results. I wouldn't recommend going much smaller than that. The important part is the coincidence of 2% or better of the SID.
No. what will be more critical is your SID. each manufacture has their own spec. Some have a +/-x mm at a set sid. Others may have a certain percentage of FOV at a set SID.
A Universal approach would be to use a wall bucky at 40cm and adjust to a knats arse or better than 1/2 of manufactures spec. I am now using the raysafe light field ruler which really speeds up the process

usually 2% of SID at 100cm but you should be able to do way better than that

I use normaly 20x20cm with good results. Then I use a 24x30cm cassette to check X-Ray
