Hi, I hope you had a good Easter Weekend. Did you decorate many eggs, hide and let your kids find them? Well then let's talk about eggs this week.

Eggs are well known for a range of nutrients including protein, vitamins and minerals. Egg yolks are one of the few foods that naturally contain Vitamin D, and egg whites are very low in calories, and have no cholesterol and no fat.

One of my favorites sweets is called "macaron", which is made of egg white with almond powder and sugar. What's a macaron? It is a French pastry with cream inside. It looks like a round meringue dome. (Crunchy outside and chewy inside!) I think you better to take a look an image than to read my explanation. (Of course it is much better to taste them!) Don't they look yummy? Oops, it seems I went off the subject, right? Anyway, you know, there are so many good recipes that contain eggs; therefore we can enjoy them with high nutritional value.

I found some trivia about eggs. Here it is::

*About 240 million laying hens produce approximately 5.5 billion dozen eggs per year in the United States.

*A hen requires 24 to 26 hours to produce an egg. Thirty minutes later, she starts all over again.

*If an egg is accidentally dropped on the floor, sprinkle it heavily with salt for easy clean up.

* Eggs age more in one day at room temperature than in one week in the refrigerator.
